Tkemali is a Georgian sauce. There are three varieties of Georgian tkemali: the Green, Yellow and Red Colour.

 

Tkemali is primarily made of cherry plum, damson plum, green plum and yellow plum. The flavour of the sauce varies, but generally tends to be pungently tart. To lower the tartness level, occasionally sweeter types of plums are used for preparation.

 

Tkemali is one of the main condiments of Georgian cuisine. It is used for fried or grilled meat, poultry and potato dishes.
